I have brought in a few of these Flintstonian NAMP 103 Frenched Rib Roasts (frenched long bone prime rib). The 7 bone rack weighs on average 23-27# and I have wet-aged them for 28+ days, then cut them into individual steaks and flash froze them.
Unique to this item you will be charged by weight. Our butcher's can cut 8oz filets all day but the finished weight on this is too unpredictable. The price quoted is a best guess. You will be sent an additional small invoice or refund based on your finished product catch weight.
